For dessert, muffins always go beautifully as simple yet elegant and yummy choices.
(Makes 12)
Ingredients:
125 g butter
4 dl wheat flour
2 dl oats
2 dl sugar
2 tea spoons of baking powder)
1 half teaspoon salt
3 eggs
2 dl yogurt
4 dl fresh raspberries or 200 g frozen raspberries
Steps:
1. Melt the butter
2. Mix wheat flour, oats, sugar, baking powder and salt.
3. Whip the eggs with the melted butter and the yogurt in a separate bowl.
4. Mix No. 2 with No. 3.
5. Put the berries into No. 4. Mix gently.
6. Pour the mixture in muffin cups.
7. Put the cups in the oven for 20 minutes at about 200°C.
Note: Oven temperature may vary depending on the oven you have.
No oven at home? Do not fret, home made tiramisu will do just as well!
(Serves 6 - 8)
Preparation time: 30 minutes (chilling time inclusive)
Ingredients:
3 cups (750 ml ) strong black coffee
3 tablespoons of brandy / Kahlua
2 eggs , separated
3 tablespoons caster sugar
250 g mascarpone
1 cup (250 ml ) cream, whipped
16 large sponge finger biscuits
2 teaspoons dark cocoa powder
Steps:
1. Put coffee and liqueur in bowl.
2. Using electric beaters, beat the egg yolks in a small bowl for 3 minutes, or until thick and pale. Add mascarpone and beat until just combined. Fold cream into mixture with a metal spoon.
3. Beat egg whites until soft peaks form. Fold quickly and lightly into cream mixture with metal spoon - Don't lose the egg white's volume!
4. Quickly dip half the biscuits, one at a time, into the coffee/liqueur mix.
5. Drain off any excess and arrange biscuits into the base of a deep serving dish. Spread half of the cream mixture over biscuits.
6. Dip remaining biscuits and repeat the layers. Smooth the final surface and dust liberally with cocoa powder. Refrigerate for at least 2 hours, or until firm to ensure the flavours are mixed properly.
